Breakfast Rice Recipes.

As usually breakfast is said to be the biggest meal of the day so rice can also start off any human’s day in the right way. When one thinks of breakfast, rice probably is not the first thing that would strike their mind, yet it is quite common for people across the globe have been using rice in the morning meal.
Now let try to distinguish some delicious rice-based breakfast that is not only appropriate for breakfast meal but also healthy and tasty.

1. Rice Porridge (Congee).

Congee, or rice porridge as it is commonly referred to as, is widely taken for breakfast in countries like China, Japan and Thailand . It’s tasty and is often served with a variety of condiments including pickles and pork or even served with eggs.

Ingredients:

1 cup of rice of your choice though I find jasmine or short-grain rice yields the best result.

6 cups of water or chicken broth

Salt to taste.

Optional toppings: Fried shallots, green onions boiled eggs, soy sauce, sesame oil and pickled vegetables.


Instructions:

1. The rice should be rinsed under cold water until the water flowing over the rice is actually clear.

2. Add rice to the pot and pour water (or broth) to it and let it boil.

3. Turn the heat down and allow it to cook for about an hour, and while it is cooking stir it now and then in order to avoid the rice to stick to the bottom of the pan.


4. Pour the mixture into a pot and cook on low heat for as long as it is possible until the rice is soft and the liquid has largely evaporated, then add salt to taste.

5. Enjoy hot depending on your preferred toppings.


Congee is really quite soothing and can actually be prepared ahead of time, thus it is ideal for a healthy breakfast meal.

2. Rice Pancakes.

Another wonder of India is Chawal ke Attention ka Cheetah –rice pancakes, which can be best described as gluten-free pancakes that are light and filling at the same time – perfect for prologue to the day! Rice flour is used to make these pancakes and can be garnished in numerous forms of spices.

2. Slowly stir small amount of water into the mix to get a slurry that has a little thicker than the pancake batter.

3. Turn on heat and heat a non-stick and coat with oil lightly.

4. Scoop a ladle spoon full of the batter and pour it to the skillet and spread it in a very thin layer.


5. The dough should be placed on this medium heat until it starts to generate some foam on the surface then turn it over to the other side and fry until it is brown.

6. This goes very well with chutney or any side of your choice – it is recommended to serve hot.

These savory rice pancakes are an excellent way to kick start your morning with so much flavor.

3. Coconut Rice Pudding

If you're particularly fond of desserts, you might have coconut rice pudding for breakfast. Creamy and sweet, it is an elaborate dish which can be made the previous night without the guilt of an extra effort.

Ingredients:

1 cup cooked rice (stickier the better preferably sticky rice or sushi rice)

1 cup c cononut milk

¼ cup sugar ( or whatever sweetner you use)

1 tsp vanilla flavoured extract

A little salt

Some fresh fruits, nuts or grated coconut to sprinkle on top

Instructions:

1. In this recipe, add the rice, coconut milk, sugar, vanilla extract and salt into the sauce pan.

2. Simmer on medium heat and stir after a while until it forms a very smooth paste.

3. Once it boils add the ingredents containing coconut milk to the pot then remove it from heat and allow it to cool for a little while.


4. You could top them fresh fruits such as mango, berries, or banana, then serve with the nuts or shredded coconut.

It is more than just a breakfast meal, it can be also served cold or warm, perfect if you have little time in the morning.
